This is a quick and easy to follow Bibim Guksu recipe. It takes less than 10 minutes to make. Bibim guksu sauce doesn’t require any cooking except the noodles.

Bibim guksu is a popular Cold Korean noodle dish made with Somen noodles which are a variety of thin wheat noodles. Bibim guksu sauce is made with Kimchi, garlic, gochujang, sugar, and sesame oil. I made a simple chili sauce using few ingredients, a recipe I followed from maangchi and it turned out super delicious.
In this recipe, I use Kimchi brine for a tangy sour taste that pairs well with gochujang, sugar, and sesame oil. Toss the cooked noodles in the sauce which coats every strand of noodle and makes it incredibly delicious. The noodles have a spicy taste from gochujang, kimchi, and kimchi brine. So finely chopped cucumber and boiled egg cool the palate.
Some bibim guksu recipes use scallions or scallions with apples, gochugaru, rice vinegar, garlic, sugar or honey for sweetness. Some recipes also use soy sauce in the sauce. You can add vegetables such as cucumber, carrots, lettuce, zucchini on top of the noodles. This recipe is easy to adjust to your taste. Since this noodle dish is served cold, you can boil the noodles and prepare the sauce in advance and store it in the refrigerator making it a perfect lunch box recipe.

Korean cold noodles can be made with various recipes, can be served with iced sauce or sweet and spicy bibim sauce. The bibim guksu sauce that I share here is made from kimchi, gochujang, sesame oil, sugar and garlic. It’s easy and fast to make.

Ingredients


noodles – I used Somen noodles which are thin wheat noodles. You can use various types of noodles including shirataki noodles too.
Gochujang – Korean red chili paste also known as gochujang is used in sauces resulting in a thick, glossy sauce.
Kimchi- Kimchi has a variety of flavor profiles that form the basis of the sauce. The cabbage is finely chopped which adds texture to the noodle dish. The kimchi brine adds a sour taste to the sauce.
Garlic – Although optional, it adds aroma and flavor.
Sugar – I use sugar for the sauce. You can also use honey or brown sugar.
Toasted Sesame Oil – one of the main ingredients for noodles is toasted sesame oil.
toppings – boiled egg, cucumber, ground roasted sesame seeds for topping.


Expert Tips
- Chop the kimchi before mixing it into the sauce so that it is evenly distributed.
- You can skip the kimchi brine if you want less spicy noodles.
- Reduce the garlic if you don’t want it spicy.
- Sprinkle noodles with carrots, lettuce too.
- Rice vinegar, soy sauce, honey, can be used for sauces too.
- You can use grated apples in the sauce instead of sugar.
Serving & Storage
Since this noodle dish is served cold, you can boil the noodles and prepare the sauce in advance and store it in the refrigerator making it a perfect lunch box recipe. Korean spicy noodles stay fresh for up to 3 to 4 days in the refrigerator.


Step by Step Images
1) Boil plenty of water. Add Somen noodles or other noodles of choice. Boil according to package instructions.


2)Once cooked, strain through a sieve or sieve. Rinse the noodles with plenty of cold water while scrubbing the noodles to remove any remaining starch.


3) Strain completely to remove excess water. Set aside.


4) Slice the cucumber thinly and cut into julienne. Set aside until needed.


5) Make bibim guksu sauce. Take chopped Kimchi, kimchi brine, gochujang in a bowl.


6) Add peeled minced garlic, and sugar.


7)Add toasted sesame oil.


8) Mix this very well. Taste and adjust to your liking.


9)Now add the strained boiled noodles and mix well with the kimchi paste.


10) Bibim guksu is ready to be served.


11)Now take these noodles in a bowl.


12) Top with chopped cucumber and crushed toasted sesame seeds.
