In England, sausage rolls are the ultimate on-the-go snack—and this recipe puts a holiday twist on my classic Homemade Sausage Rolls.

I got a few comments asking, “Where is the sausage in these Turkey, Stuffing & Cranberry Sausage Rolls?” Here’s the fun part: not all sausage comes in a casing. By definition, sausage is simply ground or chopped meat mixed with other ingredients and spices. In this recipe, turkey, stuffing, and cranberries are chopped and mixed together to create a flavorful turkey meatloaf, then shaped like a sausage. So yes – these rolls really count!
Making these sausage rolls is very easy because the filling is already ready, so all you need to do is roll the finished dough. There’s not much cooking involved, there’s something else to be thankful for. Popular recipe here since 2018.

Leftover Roast Turkey
Use chopped or shredded cooked turkey – light meat, dark meat, or a mixture. This adds delicious flavor and makes these rolls the perfect post-holiday treat.
Stuffing (or Dressing)
I love my Sage and Onion Cornbread Stuffing, but whatever you have on hand will work too, whether homemade or store bought. It delivers savory spice, comforting flavors, and classic holiday comfort.
Cranberry Sauce
A dollop of cranberry sauce adds the perfect sweet and sour flavor that balances out all the savory ingredients. Jellied or whole berries both work well.

Store-bought puff pastry makes this recipe quick and easy. Brushred with egg wash after baking, they turn out golden, crispy and flaky – the perfect dressing for all holiday flavors.



Non-traditional alternative
You could switch it up and make these rolls with Leftover Ham, Green Beans and sweet potato – or even Roast Beef. They are also delicious as a vegetarian version with potatoes and vegetables. Really, the rest of your vacation is the limit.

Portion size
The size of the sausage roll is meal size. I like to serve it with a side of peas and a side of cranberry sauce. To make snack or appetizer size, cut in half before baking.

Ingredients

1 sheet frozen puff pastry, thawed according to package instructions

1 cup leftover cooked turkey, chopped

½ cup remaining filling

remaining ¼ cup cranberry sauce, strain the juice

1 egg, beaten with a teaspoon of milk
instructions
- Preheat oven to 400°F/200°C. Line a baking sheet with parchment paper.
- To a bowl, add turkey, stuffing, and cranberry sauce. Stir well.
- Fold pastry on a floured surface to measure 16 x 9 inches (40 x 23 cm). Cut in half lengthwise.
- Add 2 tablespoons of the turkey mixture to the edge closest to you. Brush egg wash on the edge directly opposite. Roll the pastry over the filling until it meets the edge of the egg wash, making sure the seam is at the bottom.
- Once all the rolls are cooked, place them on a baking sheet and brush them all with the egg wash. Use a sharp knife. cut 3 slits in the top of each roll to release air.
- Bake for 25-30 minutes until golden brown.
