What is Ssamjang?
Ssamjang is popular and thick Korean seasonings and dipping sauces known for its sweet, savory, spicy taste profile. Ssamjang paste is also known as Korean Spiced bean paste. The name “ssam” means wrap, and “jang” means thick paste.
Ssamjang paste is not an ingredient but a sauce made using garlic, onions, gochujang, doenjang, and spices. Traditionally ssamjang is served as a sauce for Korean bbq.
About Ssamjang Pasta
I was introduced to ssamjang paste during our recent trip to South Korea. Served as a dip with Korean BBQ – and that first taste is unforgettable. Pasta has unique but spicy tastewith bold notes about garlic, gochujang and onions. Paired with white rice and grilled meatit was a match made in heaven.
This is our favorite way to eat it. We’ll wrap a piece of grilled meat, a spoonful of rice, raw garlic, and a bit of ssamjang in a crunchy lettuce leaf… and enjoy the perfect bite. Truly chef’s kiss.
Before flying home, I made sure to bring a container of ssamjang. We continue to enjoy it as a dip for our homemade Korean BBQ nights – and honestly, that’s the only way I use it. Until now – Thanks to the popular cooking show “Culinary Class War”i found that ssamjang can be used pasta! I was curious enough to try it… and I’m so glad I did. The result is creamy, savory, smoky, and absolutely delicious. Ssamjang in pasta was groundbreaking and will now be a staple in my kitchen.

Ingredients


Butter – A large amount of butter added to the pasta adds a rich taste to the dish.
Ssamjang – also known as spiced bean paste. There are additional flavors such as garlic, shallots, gochujang. Ssamjang usually comes in its iconic green bath.
Garlic – You can add more or less depending on your taste.
Gochugaru – this helps create a deep orange color sauce and also adds heat.
Salt & pepper – adds taste and flavor to dishes.
Milk – some recipes call for cream, but I find milk adds a creamy texture without too much fat.
parmesan – be sure to use freshly grated parmesan cheese which creates a creamy base for the sauce.
sesame – Crushed toasted sesame seeds are used as a topping along with extra parmesan and chopped chives.


Expert Tips
- If you don’t have ssamjang, you can swap it for miso paste along with chopped onions and gochujang.
- Finish the pasta with scallions, toasted sesame seeds for a spicy touch.
- Be sure to set aside the pasta water to loosen the pasta as needed.
- You can use any paste of your choice.

2) If you don’t have Ssamjang, you can swap it for miso paste along with chopped onions and gochujang.


3) Bring plenty of water to a boil. Add salt and pasta to hot water. Cook until package instructions. Meanwhile start making the sauce.


4)In a separate pan, add butter. Now add garlic and ssamjang. Saute for a few minutes.


5)Cooking ssamjang in butter makes it flavorful and slightly spicy.


6)Now add red chili powder, salt, black pepper powder and mix well.


7) Reduce the heat to low, pour in the milk while continuing to stir.


8)After the milk is mixed into the sauce. Add parmesan cheese and mix well.


9) The ssamjang pasta sauce is ready.


11)Now the pasta should be cooked, take the pasta out of the boiling water using tongs and add it directly to the sauce.


12) Pour in a spoonful of pasta cooking water. Add to sauce to emulsify.


13) The ssamjang paste is ready.


14)Now serve the pasta sprinkled with toasted sesame seeds, scallions and parmesan cheese.

- 150 grams Spaghetti
- 2 liter water
- 1 tablespoon Salt
For Ssamjang Pasta Sauce
- 3 tablespoon Butter
- 5 clove Garlic peel & finely chop
- 3 tablespoon Ssamjang (Korean Spiced Bean Paste) check notes
- 2 teaspoon Gochugaru (Korean red chili powder)
- 1 teaspoon Salt
- 1 teaspoon Black Pepper Powder
- 1 cup Milk
- ¼ cup Parmesan Cheese
To Serve
- 2 teaspoon Toasted Sesame Seeds destroyed
- 2 teaspoon Parmesan Cheese
- 1 NO Leek finely chopped
