Chef’s tips for success
- Take Your Time with Onions:
Cook the onions slowly until soft, do not let them brown. This produces a rich, natural sweetness that deepens the flavor of the soup. - Use Right Pan:
A skillet or pan with a thick bottom – stainless steel or cast iron – is the best choice. This conducts heat evenly and allows you to deglaze properly, removing all the flavorful browned bits from the bottom. - Fresh or Dried Sage — Both Work:
Fresh sage leaves provide a more lively herbal aroma, while dried sage offers a stronger, savory flavor. Use whatever you have, but adjust the amount (½ amount if using dry). - Other Fresh Herbs:
Fresh rosemary and thyme would also be a delicious addition. - Use Good Stock/stock:
Whether beef, chicken, or vegetables, quality stock will make all the difference. Homemade or low-sodium varieties allow you to control the seasoning. - Taste Improvements:
A splash of Worcestershire sauce, soy sauce, or even a splash of red wine can enhance the umami flavor and make your gravy taste like it’s been simmering for hours. - Thicken Smoothly:
For a sauce that doesn’t curdle, slowly add the stock to the flour and stir continuously until it thickens. - Finish with a Touch of Butter:
Add a little butter at the end for a glossy finish and richer mouthfeel. - Do Ahead & Reheat Gently:
This broth reheats beautifully. Warm gently over low heat (do not boil), adding a little stock or water to loosen the texture if necessary.

Provide advice
- Pour it over roast chicken, turkey, or ground beef—it adds a comforting, herbaceous richness that complements these meats beautifully.
- Serve with mashed potatoes (or creamy butternut squash mash) for a classic comfort combination.
- Sprinkle it over roasted vegetables or baked beans for a flavorful vegetarian option.
- Serve in broth so guests can add as much or as little as they like.

instructions
This recipe makes 1 cup (½ liter) of soup. You can double or triple the recipe to make more.
- Put the butter and oil in a frying pan/skillet over medium heat. When the butter is melted and foamy, add the onions. Cook for about 6-8 minutes, stirring frequently, until soft. Adjust the heat if necessary to prevent browning.
- Sprinkle sage leaves and onion powder, stir well. Add the flour then mix in the onions and a sprinkle of salt, cook for a minute to remove the raw taste. While stirring, slowly add the stock/broth and Worcestershire sauce. Stir until thickened. Taste and add salt and pepper to your taste.
- You can strain the onions by passing them through a fine-mesh sieve (crush the onions for maximum flavor), or puree them into the sauce using an immersion blender. You can also add the cooled sauce to a blender to make it smooth.
- See the text above for tips for chef success.
Notes
*You can also use chicken, turkey, or vegetable stock.
* * This depends on how salty your broth is. You can add more at the end.
