To make homemade breadcrumbs:
- Use 2 slices of white bread—one day old and dry, or lightly toasted. Puree in a blender or food processor until finely crushed.
For the bread sauce:
- To a saucepan, add milk, onions, cloves, nutmeg, bay leaves, salt and pepper
- Cook until it boils (watch it because it will boil quickly). Turn off the heat and leave the spices to infuse for 20 minutes.
- After 20 minutes, strain the liquid from the onion, pepper and bay leaves. Return the liquid to the pan.
- Add half the butter and breadcrumbs, bring to a boil. Stir until the bread flour is absorbed and the sauce thickens. Taste for seasoning, add salt and pepper if necessary. You can leave it as is, or blend it until smooth.
- If making ahead, let cool at this stage and refrigerate in a covered container for up to 3 days. Reheat in a pan over low heat.
- Just before serving, stir in the remaining butter.
