Growing up, I want to have Kesari in a healthier way. So, I just turned to a damaged wheat rava for health benefits. Now I can even present it to my children without guilt.

Ingredients


Wheat rava / godhumai rava / broken wheat (1⁄2 cups): This is the main ingredient of this recipe. This will be a little chewy in the texture than ordinary semolina.
Milk (1 cup) Water (1 cup) : Milk is added to provide wealth and cream to Kesari. You can also add non-usual milk such as almond milk, oat milk based on your health diet. Water helps cook whole wheat rava and also ensure soft texture.
Sugar (3⁄4 cups): Sugar is added to give a sweet taste and also to balance the taste of Kesari. If you want to make it healthier, try with other sweeteners such as date palm powder, coconut sugar, jaggery powder, and palm sugar.
Ghee: Ghee is added to the aroma and also to reach the glossy texture from Kesari.
Cardamom powder (1⁄2 tsp): Cardamom powder gives a warm and fragrant taste and also will not beat the whole taste. For a rich taste, you can also add some turmeric strands as decoration or add turmeric milk.
Cashews (1 tablespoon): Cashew beans are baked in ghee until golden brown. This gives a crazy and crispy texture for Kesari.
Raisins / kishmish (1 tablespoon): Raisins are baked in ghee until they expand. You can also add other dry fruits such as almonds, pistachios, pieces of coconut or even chopped dates to baked and decorate.
Food coloring (a little optional): This is entirely optional for yellow or red food colors. To give a natural color to Kesari, you can use turmeric or turmeric powder.

Grilling: In the pressure cooker, add ghee, then add damaged wheat rava. Bake slowly over a low flame. Stir continuously until it changes good aroma and golden brown color. Make sure not to become browned. This will almost not take 3 to 5 minutes.

- Baking damaged wheat rava is very important for taste and texture. Bake with low heat and stir continuously. Over-roasting makes Kesari too dry.
- The water ratio plays an important role in cooking wheat rava. So measure and add the appropriate water.
- You can use a shaker to mix free lumps when cooking.
- For excitement and scented, soak a few strands of turmeric in warm milk for 10 to 15 minutes. Then add turmeric milk soaked to Kesari.
- If you want to make it healthier, add high powder jaggery purity and free from small dirt.

Very! You can try other fruit choices such as pineapple, mango, apples, strawberries. Saute the fruits of the fine chopped in the ghee for 2 minutes before adding to Kesari.
4. Can I make Gluten -free Kesari?
Of course! Yes, you can make it completely gluten by replacing wheat rava with your favorite Millet Barnyard, Millet Kodo or Millet.
