Sweetened condensed milk gives white chocolate fudge a smooth, creamy texture and eliminates the need for tempering or a candy thermometer. This easy fudge recipe is also made without butter—unlike traditional chocolate fudge, which uses milk and butter and requires a careful tempering process.
So what makes it work? The secret is white chocolate. Technically it is not “real” chocolate because it does not contain cocoa solids, but it still provides a rich, melt-in-the-mouth sweet taste. Toasting white chocolate chips or chopped chocolate bars contains just enough oil to keep the fudge soft and sliceable, rather than completely set.
The best pan for making fudge
I prefer to use a classic 8×8 inch (20 x 20 cm) glass square baking dish lined with parchment paper. The parchment makes it easy to lift the fudge from the pan for clean and easy slicing.
White Chocolate Cranberry Pistachio Fudge is best served at room temperature. After placing in the refrigerator, let it rest at room temperature before cutting into small cubes with a sharp knife to get the best texture and taste.

- Cooling: For longer storage, refrigerate fudge in an airtight container for up to 3 weeks. Let it sit at room temperature before serving for the best texture and taste.
- Freezing: To extend its shelf life, freeze the fudge. Wrap each piece in parchment paper or plastic wrap, place in an airtight container or freezer bag, and freeze for up to 3 months. Thaw in the refrigerator overnight before enjoying.

Ingredients

3 cups/28 ounces (800 grams) sweetened condensed milk

5 cups/32 ounces (907grams) standard size toasted white chocolate chips

1 teaspoon vanilla extract

½ cup/4 ounces (113 grams) dried cranberries

½ cup/4 ounces shelled pistachios (113 grams), no salt
instructions
- Cut 2 pieces of parchment paper measuring 15 x 8 inches (38 x 20 cm).
- Place into an 8 x 8 inch (20 x 20 cm) square baking dish, one in each direction with a slight overlap. This is to help easily remove the fudge from the pan. If you add ingredients for a larger portion, you will need to use a larger pan.
- Into a saucepan add sweetened condensed milk over medium heat and reduce heat, cook for 5 minutes.
- Turn off the heat and let it cool slightly. Add the white chocolate little by little while stirring until slowly mixed. Keep stirring until the chocolate melts. Add vanilla extract, cranberries, and pistachios, stir until well combined. Pour the batter into the prepared pan and smooth the top.
- Refrigerate for at least 2 hours until cooked.
- Once it hardens, take it out and store it at room temperature. Cut into 2 x 2 inch (5 x 5 cm) squares.
