My colorful Greek pasta salads that are full of colors capture everything that is great about this season. To start, I mixed delicious Rigatoni paste with beans, sweet paprika, kalamata olives, cucumbers, onion, and feta cheese, then stir everything in the Greek Greek yogurt mint sauce. This is the perfect dish to be stored in the refrigerator throughout the summer for fast lunch, easy side dishes or summer billiard parties.

As far as the Salad Pasta recipe, this is my favorite (and a favorite here since 2019). This is the right time in a year because all the ingredients in the season including mini sweet paprika that are sold in bags. Do you know yellow, red and orange? They make beautiful and colorful dishes.
For a sharp and sweet addition, I added a thin slices of my pickled shallots (shown below). Their bright taste, along with the addition of herbs carrying light onions and balance with sauce cream and Feta salty taste, complements salads with refreshing pop. This pickled onion not only adds to the depth of each bite but also carries a beautiful color splash, making the dish is equally attractive with delicious.

Greek salad sauce
Concerned with protein, I made it in the food processor (or blender). This helps smooth thick yogurt. OrYou can use a hand blender and mason jar. If you just shuffle, it might not be as smooth as.
By using simple pads (like what was done in Greece), I made a mixture of lemon and mint that tastes fresh with only a little honey for sweet. This Zesty taste is beautifully completing crispy vegetables, adding refreshing brightness to the salad.
